Ed the Bread opened on Billericay High Street on Monday 18th February 1985. The new bakers owned by Eddie and Ros Brannon was at 21 High Street in the shop formerly occupied by Christine & The Gift Shop.

Eddie and Ros came to Billericay after four years in Perth Australia where they had three bakery shops. The Town was waiting for a bakery to open as Billericay’s long standing bakery of 84 years, Cottis and Sons, had closed at the end of October just passed. Ed the Bread just like Cottis baked on the premises. Ed the Bread received the support of Ray Cottis who had retired after closing his business and were able to take on experienced staff from the Cottis business.

It wasn’t long before the business looked to expand and the basement of the shop was transformed into a Coffee Lounge.

The Coffee Lounge opened on Saturday 1st March 1986, just over a year after Ed the Bread first opened their doors.
